Eat them for breakfast or as a snack in between meals! They have essential nutrients your body needs for energy and satisfy your sweet tooth at the same time.
Preheat Oven to 375
Ingredients:
- 2 – 29 ounce cans of pure 100% pumpkin (no additives)
- 2 cups coconut flour
- 1 Tbsp. cinnamon
- 1 tsp. pumpkin pie spice
- 2 tsp. baking powder
- 1 tsp. vanilla extract
- 6 scoops of vanilla plant based, organic protein powder
- 2 Tbsp. melted coconut oil
Mix ingredients with your hands. Spray muffin pans with coconut oil spray and fill with muffin batter. Cook for 45 minutes. Let cool completely before removing muffins from the pan. Once cooled place muffins in an air tight container. I often line my container with a paper towel to absorb some of the moisture from the muffins. Enjoy:)
