Ingredients:

5 sweet potatoes cut into ¼ inch slices
¼ cup extra-virgin olive oil
sprinkle sea salt and ground black pepper to liking
3 teaspoons ground cinnamon (optional)

Directions:
Preheat oven to 425° F.
Mix all ingredients in a large bowl by tossing.
Lay potatoes out on a large baking sheet. Roast for 25-30 minutes. I prefer mine a little crisp and bake longer.
