Amaranth is known as a super grain. It is a complete protein, it contains all the essential amino acids, and it’s gluten free. If that doesn’t hook ya, know this… it’s also packed with calcium, magnesium, potassium, phosphorus, and iron. And for those of you that aren’t interested in those little facts, it’s plain ol delicious and filling. It will satisfy you and satiate you!
1/3 cup cooked amaranth
6 chopped walnuts
1 teaspoon organic honey
1/4 cup raspberries or blueberries
1/2 banana
ground cinnamon to your liking
Directions:
In small saucepan, cook amaranth according to package instructions. Spoon amaranth into a bowl and add raspberries or blueberries, cinnamon, and honey. Top with walnuts and sliced banana
